Preparation advice: You will need: water, 29g fresh yeast, 500g protein bread mix. Pour 280ml of lukewarm water into a large mixing bowl and dissolve in it 29g of fresh yeast. Add 500g of the protein bread mix. Using an electric mixer with a dough hook, mix well together, slowly for the first 2 minutes, and then increasing the speed for a further 2-3 minutes until well combined. Let the dough rise in a warm place for 45 minutes. Before putting the dough into the oven, sprinkle it with water. Preheat oven to 220oC  then immediately reduce to 200oC after putting dough in. Bake for around 20 minutes. All ovens vary. For a shinier crust, sprinkle the bread again with water as it is baking.
